Worum geht es in dieser Arbeit?
Environmental health professionals need practical field tools to evaluate food safety parameters beyond temperature during retail food inspections. This column examines the use of Brix and salinity refractometers as affordable and portable tools for assessing foods fermented, cured, or preserved in sugar or brine solutions. The authors explain the relationship among Brix, salinity, water activity, and pH while emphasizing that refractometer measurements cannot directly substitute for water activity when validating food safety or shelf stability. Additional applications include detecting food adulteration, evaluating storage conditions, and assessing food quality. The column also provides practical guidance for calibrating and using analog refractometers in the field. When combined with pH measurement, food safety knowledge, and appropriate research, refractometry can provide environmental health professionals with useful screening information to support more informed inspection decisions.
